By far my favorite alternative to french fries. These zucchini “fries” compliment any burger and will give you a satisfying crunch. Best of all they’re oven “fried” using Avocado oil and my favorite “breading” topping – sugar snap pea crisps. They’re super easy to make! Besides, adding veggies to any meal is always a good thing.

Zucchini "Fries"

A delicious, crispy veggie side dish that will satisfy any need for a crunch.

Ingredients
- 2 large zucchini
- 1 large egg
- 3 cups sugar snap pea crisps
- seasoned salt
- avocado oil
Instructions
- Preheat oven to 450°
For the zucchini
- Wash and scrub zucchini clean
- Cut off ends of zucchini
- Cut zucchini in half lengthwise
- Cut each half into 1/4 inch strips
- Season liberally with seasoned salt
- Set aside
For the dredging station
- Blend 3 cups of sugar snap pea crisps on low speed until you get a panko breadcrumb consistency and add to a dish or bowl
- In another dish or bowl beat egg with 2 tablespoons of water until combined
- Sprinkle with seasoned salt
- Spray a baker's 1/2 sheet pan with avocado oil spray (for high heat cooking) or if you don't have spray use a drizzle and spread around with a pastry brush
- Dredge zucchini in egg mixture - shake off excess
- Dredge in snap pea mixture
Oven Frying
- Place on sheet pan so they don't overlap
- Spray top of zucchini with a little oil
- Bake for 10 minutes
- Flip and bake for another 5-10 minutes

- I use this method with green beans as well.
