By far my favorite alternative to french fries. These zucchini “fries” compliment any burger and will give you a satisfying crunch.  Best of all they’re oven “fried” using Avocado oil and my favorite “breading” topping – sugar snap pea crisps.  They’re super easy to make! Besides, adding veggies to any meal is always a good thing.

 

Zucchini "Fries"
A delicious, crispy veggie side dish that will satisfy any need for a crunch.

Ingredients
  1. 2 large zucchini
  2. 1 large egg
  3. 3 cups sugar snap pea crisps
  4. seasoned salt
  5. avocado oil
Instructions
  1. Preheat oven to 450°
For the zucchini
  1. Wash and scrub zucchini clean
  2. Cut off ends of zucchini
  3. Cut zucchini in half lengthwise
  4. Cut each half into 1/4 inch strips
  5. Season liberally with seasoned salt
  6. Set aside
For the dredging station
  1. Blend 3 cups of sugar snap pea crisps on low speed until you get a panko breadcrumb consistency and add to a dish or bowl
  2. In another dish or bowl beat egg with 2 tablespoons of water until combined
  3. Sprinkle with seasoned salt
  4. Spray a baker's 1/2 sheet pan with avocado oil spray (for high heat cooking) or if you don't have spray use a drizzle and spread around with a pastry brush
  5. Dredge zucchini in egg mixture - shake off excess
  6. Dredge in snap pea mixture
Oven Frying
  1. Place on sheet pan so they don't overlap
  2. Spray top of zucchini with a little oil
  3. Bake for 10 minutes
  4. Flip and bake for another 5-10 minutes
Notes
  1. I use this method with green beans as well.
