It sure smells like the holidays in my home.  These whole grain cookies are a big hit.  What?  Whole grain cookies?  Sure.  Why not?  These delectable cookies are made with less sugar than most cookie recipes, whole grains and healthy fats and added protein.  So, they actually have nutritional benefits.  Why bother?  Well, adding these nutritional elements not only taste great, but helps release the carbs slowly into your system – which is vital for avoiding weight gain and energy crashes.

Ingredients:

½ cup coconut oil

½ cup date sugar (or brown sugar)

1 free-range egg

1 tea. vanilla

¾ cups whole-wheat pastry flour

¾ cups unbleached all purpose flour

¾ cups quick oats

1 tea. baking soda

1 tea. ground ginger (or less if you don’t like a strong ginger taste)

½ tea. ground cinnamon

¼ tea. ground cloves

¼ tea. real sea salt

½ cup finely chopped pecans

¼ cup additional date sugar for topping

Directions:

Cream coconut oil and sugar until light and fluffy.  Beat in egg.  Combine dry ingredients and gradually add to creamed mixture.  Roll into 1 inch balls, roll balls into additional sugar.   Place 2” apart on a parchment lined cookie sheet, flatten with bottom of a glass   Bake at 350° for 10 minutes.  Once set, about 2 minutes, remove and cool on wire racks.
