  1. 1/2 cup raw almonds
  2. 1/2 cup pistachios (shelled)
  3. 10 dates (pitted)
  4. 1 tbs coconut oil (melted)
  5. 1/2 tsp sea salt
  6. 1/4 - 1/2 cup grated coconut (non-sweetened)
  7. 2 tbs raw honey
  8. 1/2 tea almond extract
  9. 1/4-1/2 cup dark chocolate chips
  10. 1/4 - 1/2 cup cranberries or other dried fruit
  1. Pulse nuts in food processor to break down the nuts a bit
  2. Pour nuts into a bowl
  3. Process dates and coconut oil to reach a paste-like texture
  4. Take out and dump into the bowl with nuts - add salt - mix well - at this point if mixture is too crumbly, add date and nut mixture back to the processor and blend some more.
  5. Add coconut, honey, almond extract - work in well with a fork
  6. Mix in chocolate and dried fruit
  7. Roll into balls
  8. Refrigerate for 1 hour
