Oh man, does my house smell good.  I just baked off some apples and made this amazing Pumpkin granola.  It will satisfy your sweet tooth and is loaded with fiber.  It also incorporates healthy fats and protein.  Give this a try.  Your taste buds are gonna love it.

Pumpkin Granola Recipe

Pumpkin Granola

Dry ingredients

4 Cups of Old Fashioned Oats

½ cup raw pecans

½ cup raw pumpkin seeds

¼ cup coconut palm sugar (or brown sugar)

½ tsp. real sea salt

¾ tsp. ground cinnamon

¼ tsp. ground cloves

Wet ingredients

¼ cup coconut oil

¼ cup pure maple syrup

1/3 cup pumpkin puree

½ tsp. pure vanilla extract

½ tsp. pure almond extract

Preheat oven to 350°

Mix dry ingredients together in a bowl. Warm wet ingredients in a saucepan until smooth.   Mix dry and wet ingredients well.  Spread mixture evenly onto two baking sheets.  Bake for 20 min. tossing half way.  Also, you may switch baking pans from top to bottom for even cooking after 10 minutes.  Make sure you bake in the top two thirds of the oven.  If your rack is too low it may cause burning.

Baked Cinnamon Apples

2 lbs. of apples – I used Gala – peeled and cored

1 tsp. cinnamon

1 TBS lemon juice

¼ cup coconut palm sugar – or brown sugar

1 TBS starch (arrowroot, tapioca, or corn etc)

1 tsp. pure vanilla extract

¼ tsp. pure almond extract

¼ tsp. real sea salt

Cut apples into ¼ inch slices and place into a large bowl.  Add remaining ingredients.  Toss well to coat.  Bake at 350° for 30 minutes.

Super easy!
