If you’re looking for a fast easy go to lunch or dinner, you’ll love these chicken nuggets.  They’re baked with my secret crunch ingredients.  And as always, they’re good for you.  Make a batch on Sunday, and refrigerate or freeze leftovers for later.All of the “boys” in my home, age 18, 21 and 50 love this recipe.  They especially love it when they can have leftovers for lunch the next day.  No need to serve these with traditional French fries.

Chicken Nugget Recipe


Preheat oven to 425 degrees


Prepare the chicken:

Cut 2 boneless, skinless chicken breast into 1 ½  inch cubes

  • Organic is best, but you can find antibiotic free and no added growth hormones at a reasonable price

Place in bowl.

Add 2 tablespoons Dijon mustard

1 tablespoon seasoned salt

  • Check out my seasoned salt recipe (below) with a nutritional kick

Mix to coat all the chicken

Set aside.

Let stand for 20 minutes.


Make the crunchy coating:

1 cup of baked pita chips

1 cup of sugar snap pea crisps

For a gluten free option – use 2 cups baked sugar snap pea crisps only.


Blend coating ingredients in a blender or food processor on low until you get a fine crumbly mixture.


Set aside.


Make a breading station:

In separate bowls add:

¼ cup flour

1 egg with 1 tablespoon of water

Crunchy coating mixture

Set aside


Putting it all together:


Dip the chicken pieces first in flour, then in egg mixture, then in crunchy coating mixture.


Spray a baking pan or cookie sheet with 1inch sides with avocado oil or other high heat oil.  Place chicken pieces on the pan then spray a little more oil on top of the nuggets.  Bake at 425 degrees for 15 minutes.


Great dipping sauce options – honey mustard recipe (below) or barbeque sauce recipe (below) or eat them as is – they have a fantastic flavor!

Seasoned Salt Recipe

Includes Nutritional Yeast for an extra vitamin and mineral kick.

Added Tumeric for anti-inflammatory benefits.


2 TBS Nutritional Yeast (found in health food stores)

2 TBS paprika

1 TBS real sea salt

1 tsp. celery seed

1 tsp. turmeric

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. lemon pepper


Add ingredients to an empty spice bottle and shake well to combine.


Homemade Honey Mustard Dressing/Dip

4 TBS Organic Mayo

1 TBS Raw Honey

1 TBS Dijon Mustard

¼ tsp. real sea salt


Mix in a small bowl until incorporated.


Homemade BBQ Sauce

In a saucepan add:

1 c. organic ketchup

½ cup water

2 TBS tomato paste

2 TBS apple cider vinegar

2 TBS molasses

2 TBS honey

2 TBS lemon juice

2 tsp. dry mustard

½ tsp. onion powder

½ tsp. garlic powder

¼ tsp. crushed red pepper

¼ tsp. salt

¼ tsp crushed pepper blend


Bring to a boil.  Reduce heat and simmer for 20 min. stirring often.
