Yes, I know, potatoes are vegetables too.  So why bother making Cauliflower Tots?  Well, for one, Cauliflower is loaded with nutrition.  They’re known for their anti-inflammatory compounds that help protect against DNA damage, inactivate carcinogens, and inhibit tumor blood vessels.  That’s some arsenal to have in your wellness plan.

Cauliflower “Tater” Tot Recipe

1 large cauliflower

½ cup flour

½ cup Parmesan cheese

½ teaspoon real sea salt

1 teaspoon dried basil

1 teaspoon dried parsley

1 teaspoon garlic powder

1 teaspoon onion powder

2 large eggs – beaten

 

Preheat oven to 425 degrees

Prepare baking sheet with a little avocado oil spray or other spray

 

Steam your cauliflower until tender – about 10 minutes or so.

Drain well.  Let cool.

 

Lightly pulse cauliflower in a processor (or you can chop away with a knife) until you reach a crumble consistency.

 

Transfer to a large bowl and add remaining ingredients.

Toss with your hands until all incorporated.

Mold tater tots with your hands.

Line them up on a baking sheet and spray top of tots with oil.

Bake for 10 min then flip and bake for 10 more or until golden brown.

 

Serve warm.  Enjoy!
