I’m always looking for ways to get more veggies in my diet.  Vegetables are the star of my meals.  And when you can make them into a tasty side dish to replace starchy white rice, I’m all in.  I’ve successfully made Spanish and Asian style “rice” out of cauliflower.  My family loves it.  Give this a try low carb recipe a try.  It’s pretty easy and will compliment many meals.

Ingredients
  1. 1 medium head of Cauliflower - not too small, not too big
  2. 2 TBS olive oil
  3. 1 medium onion - small dice
  4. 1/4 bell pepper - any color - small dice
  5. 3 garlic cloves - pressed
  6. 1/4 cup tomato sauce
  7. 1/4 tsp garlic powder
  8. 1/4 tsp onion powder
  9. 1/4 tsp ground cumin
  10. 1/4 tsp paprika
  11. 1 tsp sea salt
  12. A little ground black pepper to taste
  13. 1/4 cup chicken broth or veggie broth
  14. 1/4 cup fresh cilantro - chopped
Instructions
  1. Cut cauliflower into individual florets (discard thick stem)
  2. Break down cauliflower in two batches in a food processor, pulsing until you get a rice like consistency and set aside
  3. Heat oil in a large pan on medium heat, add onions and bell pepper and sauté for three minutes
  4. Add garlic and sauté for 30 more seconds until fragrant
  5. Add tomato sauce and all the spices and sauté for three more minutes
  6. Add Cauliflower and chicken broth and heat through then turn to low, until cauliflower is cooked, about 20 minutes, stirring frequently uncovered (or until liquid evaporates).
  7. Turn off heat, add fresh cilantro and serve.
