OK I know what you’re thinking – “Evelyn, you’ve taken this health-kick thing too far.”   Black beans and avocado in a brownie?  Oh yea. This recipe is awesome!  I served it to my sons without saying what they were made of – and they totally enjoyed it.   I hope they don’t see this blog post or the secret will be out.

Ingredients

½ large avocado

3 cups cooked black beans – rinsed and drained

3 whole eggs

1 cup of coconut palm sugar

¾  cup regular cocoa powder

¼ cup dark (dutch processed) cocoa powder

* or you can use 1 cup regular cocoa powder and skip the dark

2 tsps. vanilla extract

½ tsp. baking soda

½ tsp. real sea salt

 

Preheat oven to 350°

Combine all ingredients in blender or food processor and blend until smooth.

Pour into greased (I used coconut oil spray) square brownie pan.  Top with chopped walnuts or pecans – optional.  Bake for 30 min or until a toothpick inserted comes out clean.

This food for the soul won’t spike your blood sugar so dramatically because they include slow carbs, healthy fats and a good amount of protein.  It provides a good amount of fiber also.  So give it a try.  You’ll be surprised how good it taste.  If you’re sharing with family and friends, don’t tell them what’s in it.  Just serve and observe.
