I know with life being so busy we need fast go-to healthy dinners that can get on the table quickly after a long day of work. This light and tasty recipe is the perfect meal for any evening of the week. It’s quick and easy, and you can have it on the dinner table in 30 minutes.
This recipe originated from my love of chicken lettuce wraps at PF Chang’s. And because I don’t have time to go to PF Chang’s every time I have a hankering for them, I decided to try to make my own…and with much success. Yum!
I’ve incorporated the flavors of the chili sauce, mustard and soy sauce right into the mix and added a secret ingredient to take these wraps over-the-top.
2 TBS Tamari or Soy Sauce
2 TBS Rice Wine Vinegar
2 TBS Honey or other sweetener
1 TBS Garlic Chili Sauce
1 TBS Mustard (any kind – mild, dijon, Chinese hot)
1 TBS Ketchup (secret ingredient – gives it a tangy/sweet flavor)
½ tsp Toasted Sesame Oil
Mix all ingredients together in a bowl – set aside for stir-fry.
Stir Fry Ingredients
1 TBS Avocado Oil or other mild tasting oil
1 lb ground Chicken or crumbled extra firm tofu
3 Garlic cloves – pressed
1 tsp fresh Ginger – grated
3 Scallions (white and green parts) cut as pictured above
1 cup Carrots – grated
1 cup Mushrooms – I like baby bellas – chopped
1 small can Water Chestnuts – chopped
Sauté chicken or tofu in a little oil on medium high heat until cooked through – stirring frequently about 5 minutes.
Add garlic, ginger, onions, carrots, mushrooms, water chestnuts – cook for another 2 more minutes.
Add the sauce and mix until combined – cook for another minute.
Lettuce leaves – Boston, Bibb, or Iceburg etc.
Fill lettuce leaves with chicken or tofu mixture.
Optional: Top with onion, shredded carrots, and additional tamari or soy, mustard, chili sauce blend – like they do at the restaurant.
